Recognizing problems of a global nature, like people that underestimate the
importance of ergonomic factors and occupational risks prevention in their daily
activities, it is important to note that this condition leads to increase the risk
associated with their works. The café’s areas, bars and restaurants are not exception
to this, whereby the objective of this research is to determine the ergonomic and
occupational risks prevention criteria in the planning and design of a coffee lounge,
grounded in the characterization of the developed functions in their areas. It is a field,
descriptive and transactional research with non-experimental design, where sheets
for systematic observation data collection were used. The population consisted of
establishments Coffee Lounge located in the north of the city of Barranquilla, from
which appeared a census sample. The results showed that although there exist a
concern for maintaining the details of the local with the public, preexists disregard for
the integral and systemic factors that predispose to risk, for which is not fully comply
rules and laws. This work provides a management technical support through of the
sheets of observation for monitoring aspects inherent to risk in these establishments,
from a systemic perspective. Besides this research offers ergonomic and
occupational risks prevention criteria, which from a management approach allowing
sustainability of comfort and safety conditions in the Coffee Lounge.
